Biohale®蔗糖和Biohale®海藻糖二水合物均为非还原结晶二糖。非还原糖与氨基酸和蛋白质的相容性要优于还原糖，且不易被酸水解。

BioHale®辅料的另一优点是有助于复杂分子保持其天然构象。当前有几种理论阐述这种稳定作用的机制。在干燥系统中，非晶玻璃的形成在玻璃态假说和水替代假说中都是至关重要的。
